Satay Chicken



Get the crock pot going on slow setting. Then add:


  • 1/4 cup soy sauce
  • 1/4 cup orange marmalade
  • 1/4 cup orange juice
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cumin
  • 1 tbsp lime juice
  • 2 tbsp rice wine vinegar
  • 3 tbsp creamy peanut butter
  • 2 cloves garlic, minced

Whisk it all up and then layer on:

  • 500 g Chicken Breasts (2)

Let it slow cooker for a while.

What goes with? Noodles or rice maybe.


All done.


Variations:
Try it with pork tenderloin, or make just the sauce in the slow cooker to go with grilled meat.
