Satay Chicken
Get the crock pot going on slow setting. Then add: |
- 1/4 cup soy sauce
- 1/4 cup orange marmalade
- 1/4 cup orange juice
- 1/2 teaspoon ground coriander
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground cumin
- 1 tbsp lime juice
- 2 tbsp rice wine vinegar
- 3 tbsp creamy peanut butter
- 2 cloves garlic, minced
Whisk it all up and then layer on:
- 500 g Chicken Breasts (2)
Let it slow cooker for a while.
What goes with? Noodles or rice maybe. |

Variations:
Try it with pork tenderloin, or make just the sauce in the slow cooker to go with grilled meat.
